A hearty Boerewors stew in a bowl, featuring chunky pieces of boerewors sausage, sautéed onions, green peppers, and a rich tomato-based sauce, garnished with parsley, ready to serve with rice, bread or Pap

MARULA BOEREWORS STEW

Serves: 3-4

Prep Time: 10 min

Cook Time: 25–30 min



Ingredients



500g Marula Original Boerewors

½ onion, finely chopped

¼ green pepper chopped

1 clove garlic, minced

1 can chopped tomatoes

½ tsp Rajah mild curry powder

½ tsp paprika

½ tsp parsley (dried)¼

tsp salt¼ tsp black pepper

1 beef stock cube

½ tsp sugar

3 tbsp Worcestershire sauce

2 tbsp All Gold tomato sauce


INSTRUCTIONS

Heat olive oil in a large pot over medium heat.


Add the boerewors and brown on all sides (about 5–7 minutes).


Remove from pot and cut into 2–3 cm chunks. - Set aside.


Sauté the Vegetables in same pot/panIn the same pot, add chopped onion, green pepper, and garlic.Sauté until soft and fragrant (3–4 minutes).


Add the Spices- Stir in Rajah mild curry, paprika, parsley, salt, and pepper.Cook for 1 minute to release the aromas.


Add the Liquids,Pour in the tomato & onion mix, Worcestershire sauce, All Gold tomato sauce, and ½ tsp sugar.Crumble in the beef stock cube.


Stir well to combine.Simmer the Stew.


Return the boerewors to the pot.


Reduce heat to low, cover, and simmer for 15–20 minutes, stirring occasionally, until the boerewors is cooked through and the sauce has thickened slightly.


Serve.


Taste and adjust seasoning if needed.Serve hot with rice, pap, mashed potatoes, or fresh bread.


💡 Chef’s Tips:


You can add extra vegetables like carrots or potatoes for a heartier stew.For a slightly tangy twist, squeeze a little lemon juice just before serving.Leftovers taste even better the next day as the flavors develop.

OVEN BAKED SHORT RIBS

Ingredients (Southern African Style)

• 1.8 kg beef short ribs


Dry seasoning mix

• 15 g Robertson Spice Cajun

• 15 g Aromat

• 15 g Robertsons Steak & Chops Spice

• 10 g Royce beef stock powder

• 10 g onion powder

• 10 g garlic powder

• 10 g black pepper

• 8 g ground cumin

• 8 g smoked paprika


Sauce mixture

• 120 ml Spur BBQ sauce

• 60 ml Sweet Chilli Sauce

• 30 ml Colman’s English Mustard

• 120 ml All Gold Tomato Sauce

• 30 ml Robertsons Liquid Smoke or browning sauce

• 80 ml green seasoning (blend of fresh coriander, parsley, garlic, spring onion, chilli, and oil)


Finishing

• Extra BBQ sauce for glazing at the end (Spur or similar)


Green Seasoning (80 ml blend)


Blend:

• fresh coriander

• parsley

• spring onion

• garlic

• ginger

• green chilli

• oil and a little vinegar


This version will give the ribs a proper Southern African braai flavour
